Crunch, crunch, crunch! Oh, do you hear that? That’s the sound of Crispy Chili Beef, making its merry way to your tastebuds! The outside is (as the name suggests) crispy and delightful, a light shell wrapped around beautifully marinaded savory beef. Sautéed peppers, onions, and spicy chiles help accent the flavor of the beef, as does the tangy, umami-packed stir-fry sauce. All you need is your favorite rice to cushion everything and Crispy Chili Beef will take care of the rest!
Ingredients
For the steak and the marinade:
- 1 tablespoon light soy sauce
- 1 teaspoon ginger garlic paste
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/4 teaspoon white pepper
- 7 ounces rump steak or sirloin steak, cut into thin strips
For the stir-fry sauce:
- 3 tablespoons sweet chili sauce
- 2 tablespoons ketchup
- 2 tablespoons light soy sauce
- 1 teaspoon vinegar, white or rice
- 1 tablespoon sugar
- 1/2 teaspoon salt
For the stir-fry:
- 1 egg
- 1 cup cornstarch or potato starch
- oil, to taste, for frying
- 1/2 sweet onion, sliced
- 1/2 bell pepper, sliced
- 2-3 scallions, sliced
- 2-3 hot chilies or Bird’s eye chiles, seeded and sliced
Directions
Step 1 –Mix 1 tablespoon soy sauce, the ginger garlic paste, the sesame oil, 1 teaspoon of the sugar, and the white pepper together in a large bowl.
Step 2 –Add the steak strips to the soy sauce mixture and marinate for 15 minutes.
Step 3 –In a small bowl, mix the sweet chili sauce, the ketchup, the remaining soy sauce, the vinegar, the remaining sugar, and the salt.
Step 4 –Break the egg into the beef marinade and mix it well.
Step 5 –Coat the beef strips with the cornstarch and make sure all the beef strips are separated.
Step 6 –In a high-rimmed pot, heat the oil on high heat until it reaches 350 degrees F.
Step 7 –Add the coated beef and deep-fry it until it reaches an internal temperature of at least 145 degrees F and is crispy, about 1-2 minutes.
Step 8 –Transfer the beef from the oil and place it on a paper-towel-lined plate to drain.
Step 9 –Heat a wok or a high-rimmed pan over medium-high heat.
Step 10 –Drizzle the oil into the wok and allow it to heat up.
Step 11 –Add the onions to the oil and cook until they are translucent, about 2-3 minutes.
Step 12 –Add the pepper slices to the onions and cook, stirring well, until they are tender, about 3-4 minutes.
Step 13 –Add the fried beef strips, the stir-fry sauce, the scallions, and the chilies to the onion mixture and cook while stirring, until the dish is warmed through, about 1-2 minutes.
Step 14 –Serve immediately.
