Crispy Fish Sticks

Fish sticks should just be school cafeteria fare or baked up from the frozen section. Crispy Fish Sticks show just how good fish sticks can be when you make them from scratch: the fish is extra flaky and flavor, the coating is crispier and with better seasoning, and they’re perfect for serving with fries! Best of all, it only takes 30 minutes to make your own Crispy Fish Sticks, so it’s great for when you want to shake up your weeknight dinners!

Ingredients

  • 2 white fish fillets, such as tilapia, cod, or catfish
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons half-and-half
  • 1/4 cup all-purpose flour
  • 1/3 cup plain breadcrumbs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning
  • 1/2 cup vegetable oil

Directions

Step 1 –Using a sharp knife, slice the fish fillets into 3/4-inch-wide strips.

Step 2 –Season the fish strips with the salt and the pepper.

Step 3 –In a shallow bowl, whisk together the egg and the half-and-half.

Step 4 –In another bowl, add the flour.

Step 5 –In another bowl, combine the breadcrumbs, the garlic powder, and the Italian seasoning.

Step 6 –Dip each fish strip in the flour, then in the egg mixture, then in the breadcrumb mixture. Coat each strip thoroughly and shake off any excess.

Step 7 –Repeat with each of the fish strips.

Step 8 –Heat a pan over medium-high heat.

Step 9 –Add the vegetable oil.

Step 10 –Add the coated fish strips in batches and fry until golden-brown and cooked through at 145 degrees F, about 3-4 minutes per side.

Step 11 –Serve.
