Easy Baked Burritos

You don’t have to leave your home to eat some delicious Mexican food! This recipe for Easy Baked Burritos is full of flavor and entirely customizable. The burritos are filled with tender ground beef, crunchy onions, hearty pinto beans, fresh salsa, fluffy rice, and creamy cheddar cheese. Ingredients

  • 1/2 pound ground beef
  • 1/2 cup onions, chopped
  • 1/2 package taco seasoning mix
  • 1/6 cup water
  • 1 (16 ounce) can pinto beans, drained
  • 1 cup salsa
  • 1 cup long-grain rice, cooked
  • 2 cups cheddar cheese, shredded and divided
  • 12 (6-7-inches) flour tortillas

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a skillet over medium heat, brown the ground beef and onion, about 6-8 minutes.

Step 4 –Add the taco seasoning mix and water, cooking according to package directions.

Step 5 –In a bowl, combine the beans, salsa, rice, and 1 cup of the cheddar cheese.

Step 6 –Spoon about 1/3 cup of the meat and bean mixture on each tortilla.

Step 7 –Fold the sides and ends of the tortilla over the filling and roll them up.

Step 8 –Arrange the burritos in the prepared baking dish.

Step 9 –Sprinkle the tops of the burritos with the remaining 1 cup of the cheese.

Step 10 –Cover and bake the burritos until heated through, about 20-25 minutes.

Step 11 –Top your burrito with your choice of toppings and serve!
