Ingredients

  • 12 ounces bowtie pasta
  • 3 cups rotisserie chicken, shredded
  • 1/2 cup bacon, cooked and chopped
  • 2 1/2 cups cheddar cheese blend, shredded, plus more, to taste
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 1 (7-ounce) can diced green chiles, undrained
  • 1 cup ranch dressing
  • 3/4 cup barbeque sauce
  • 1 tablespoon onion, minced

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Bring a large pot of water to a boil.

Step 3 –Add the pasta to the water and cook to al dente, according to the package directions.

Step 4 –Drain the pasta.

Step 5 –In a large mixing bowl, add the pasta, the shredded chicken, the bacon, 2 1/2 cups of the cheese, the corn, the diced tomatoes with green chilies and their juices, the diced green chiles and their juices, the ranch dressing, the barbeque sauce, and the minced onions and toss to combine.

Step 6 –Transfer the pasta mixture to a casserole dish.

Step 7 –Top the pasta mixture with the extra cheese.

Step 8 –Bake the chicken casserole until the cheese is melted, about 15-20 minutes.

Step 9 –Serve.
