Ingredients
- 1/2 pound sea scallops
- salt, to taste
- pepper, to taste
- 1 tablespoon avocado oil
- 2 tablespoons butter
Directions
Step 1 -Preheat a cast-iron skillet over medium-high heat.
Step 2 -Pat the scallops very dry with a paper towel.
Step 3 -Sprinkle the scallops with the salt and the pepper.
Step 4 -When the pan is hot, add the oil.
Step 5 -Once the oil is hot, place the scallops in the pan, giving them enough room in between so they don’t steam each other. The scallops should make a sizzling noise when they are placed in the pan.
Step 6 -Cook the scallops for 2 minutes, making sure not to move them or touch them at all.
Step 7 -Flip the scallops over with a pair of tongs, and add the butter to the pan.
Step 8 -Let the scallops cook until cooked to 145 degrees F, about 1 minute, basting the scallops with the butter throughout.
Step 9 -Remove the scallops from the pan.
Step 10 -Serve!
