Energy Salmon

Feeling a little dragged down? Have no fear, Energy Salmon is here! Get ready to have that extra pep in your step you’ve been craving. It’s simple, really. All you need are some rosy and perfectly seasoned salmon fillets. And then all you have to do is pile them high with sweet, sun-dried tomatoes, earthy artichoke hearts, tangy capers, and fresh spinach. After such a wholesome, heart-healthy feast, you’ll feel like nothing can stop you! This Energy Salmon is just that powerful. Who knows what you’ll be capable of!

Ingredients

For the salmon:

  • 1 tablespoon olive oil
  • 4 (4-ounce) salmon fillets
  • 1/4 teaspoon salt

For the veggies:

  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup artichoke hearts, chopped
  • 2 tablespoons capers, drained
  • 6 ounces fresh spinach
  • salt, to taste

Directions

Step 1 –In a large skillet over medium-high heat, heat the oil.

Step 2 –Season the salmon fillets evenly with 1/4 teaspoon of the salt.

Step 3 –Add the fillets, flesh-side down, to the hot oil and sear for 4 minutes.

Step 4 –Reduce the heat to medium and flip the fillets.

Step 5 –Sear the fillets until they reach an internal temperature of at least 145 degrees F, about 4-5 minutes.

Step 6 –Transfer the fillets to a plate.

Step 7 –In the same skillet, add the garlic, the sun-dried tomatoes, the artichokes, the capers and cook, while stirring, for 1 minute.

Step 8 –Add the spinach to the veggie mixture and cook, while stirring, until it wilts, about 2-3 minutes.

Step 9 –Season the veggie mixture with the extra salt.

Step 10 –Plate the fillets and top with the veggie mixture.

Step 11 –Serve.
