Follow The French Onion Pasta

The rich, savory, caramelized onion flavor of French onion soup is infused into the sauce that is coating every piece of tender rigatoni pasta. Simple and cheesy, Follow The French Onion Pasta can easily be made vegetarian, too! That ensures everyone can follow the French onion goodness!

Ingredients

  • 2 tablespoons butter
  • 1 large onion, thinly sliced
  • salt, to taste
  • 2 tablespoons sherry
  • 1/4 cup dry white wine
  • 5 sprigs fresh thyme
  • black pepper, to taste
  • 8 ounces rigatoni pasta
  • 3 cups beef or vegetable stock
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup parmesan cheese, freshly grated, plus more, to taste, for topping
  • 1/4 cup half-and-half, can substitute heavy cream or milk

Directions

Step 1 -In a large pot or Dutch oven over medium heat, melt the butter.

Step 2 -Add the onions to the melted butter and season them generously with the salt.

Step 3 -Cook the onions, while stirring, for 5 minutes.

Step 4 -Reduce the heat to medium-low and cook the onions, while stirring occasionally, until caramelized, about 20 minutes.

Step 5 -Add the sherry and the white wine and stir to combine, while scraping the bottom of the pot to release the browned bits.

Step 6 -Add the thyme, the salt, and the pepper to the onion mixture.

Step 7 -Add the rigatoni, the beef stock, and the Worcestershire sauce and stir to combine.

Step 8 -Bring the pasta mixture to a boil.

Step 9 -Cook until the pasta is al dente, about 15 minutes.

Step 10 -Turn off the heat.

Step 11 -Remove and discard the thyme sprigs.

Step 12 -Add 1/4 cup of the parmesan cheese and the half-and-half and stir to combine well.

Step 13 -Garnish with the extra parmesan and serve hot.
