Ingredients

  • olive oil, to taste
  • 4 slices thick-cut bacon, cut crosswise into 1/2-inch pieces
  • 1 large yellow onion, peeled and diced
  • 1 medium yellow bell pepper, diced
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 teaspoons kosher salt, divided
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon freshly ground black pepper
  • 3 cups frozen diced potatoes
  • 2 cups cheddar cheese, shredded

Directions

Step 1 –Arrange a rack in the middle of the oven.

Step 2 –Preheat the oven to 350 degrees F.

Step 3 –Coat a 9×13-inch baking dish with the olive oil.

Step 4 –In a large skillet over medium heat, cook the bacon slices, stirring occasionally, until they are browned and crisp, about 5-7 minutes.

Step 5 –Add the onion, the bell pepper, the garlic, the sun-dried tomatoes, and 1 teaspoon of the salt to the bacon and cook until the veggies are fragrant and soft, about 5 minutes.

Step 6 –Transfer the veggie mixture away from the heat and allow it to cool slightly.

Step 7 –In a large bowl, whisk the eggs, the milk, the remaining salt, and the pepper together.

Step 8 –Stir the frozen diced potatoes, the cheese, and the veggie mixture into the egg mixture.

Step 9 –Bake the casserole, uncovered, until a knife inserted into the center comes out clean and the top is light and golden-brown, about 40 minutes.

Step 10 –Serve immediately.
