Ingredients

  • 1 large peach, pureed
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 4 cloves garlic, pressed
  • 1 tablespoon ginger, freshly grated
  • 2 tablespoons cooking oil
  • 3 pounds chicken thighs, bone-in
  • 2 large shallots, thinly sliced
  • 1 large peach, thinly sliced
  • pinch of cayenne

Directions

Step 1 –Add the pureed peach, soy sauce, brown sugar, pressed garlic, cayenne, and ginger together in a small mixing bowl, whisking until combined. Set the sauce aside.

Step 2 –Preheat the oven to 375 degrees F.

Step 3 –Preheat the cast-iron skillet or oven-safe cooking pan over medium-high heat.

Step 4 –Add the cooking oil to the hot skillet.

Step 5 –Place the chicken thighs in the hot oil and sear until well browned, about 4-5 minutes per side.

Step 6 –Transfer the chicken to a plate.

Step 7 –Add the shallots and peaches to the skillet, cooking until softened, about 3 minutes.

Step 8 –Add the chicken back to the skillet, nestling it in with the shallots and peaches.

Step 9 –Spread the sauce over the chicken, shallots, and peaches.
