Great Start Muffins

Talk about jumping out of bed and getting a fresh start to the day; these little baked goods are packed with sunrise energy! Ingredients

  • 2 1/4 cups white whole wheat flour
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 tablespoon unsalted butter or coconut oil, melted and cooled slightly
  • 2 large egg whites, at room temperature
  • 1 tablespoon vanilla extract
  • 2 1/2 teaspoons liquid stevia
  • 1/2 cup plain nonfat Greek yogurt
  • 3/4 cup plus 2 tablespoons nonfat milk, divided
  • 1 1/2 cups freshly grated zucchini, thoroughly patted dry

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat 12 muffin cups with nonstick cooking spray.

Step 3 –In a medium bowl, whisk together the flour, the cinnamon, the allspice, the nutmeg, the baking powder, the baking soda, and the salt.

Step 4 –In a separate bowl, whisk together the butter, the egg whites, the vanilla extract, and the liquid stevia.

Step 5 –Add the Greek yogurt to the wet ingredient mixture, stirring until no large lumps remain.

Step 6 –Stir 6 tablespoons of the milk into the liquid mixture.

Step 7 –Alternate between adding the flour mixture and remaining milk to the liquid mixture, beginning and ending with the flour mixture, and stirring just until incorporated after each addition.

Step 8 –Gently fold in the zucchini.

Step 9 –Divide the batter between the prepared muffin cups.

Step 10 –Bake in the preheated oven until the top feels firm to the touch and a toothpick inserted into the center comes out clean, about 30-34 minutes.

Step 11 –Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Step 12 –Serve.
