Ingredients

For the garlic oil:

  • 4 cloves garlic, peeled
  • 3/4 teaspoon kosher salt, divided
  • 1 cup extra-virgin olive oil
  • 2 tablespoons fresh chives, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 lemon, juiced

For the potatoes:

  • 3-4 large russet potatoes, sliced lengthwise into 1/2-inch-wide ovals
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 –Coat the grill grates with nonstick cooking spray and preheat the grill to medium heat.

Step 2 –Place the garlic cloves and 1/2 teaspoon of the salt on a cutting board and use the side of a knife to carefully mash them together until a paste-like mixture forms.

Step 3 –In a small saucepan over medium-low heat, add the garlic mixture, the olive oil, the chives, the parsley, the lemon juice, and the remaining 1/4 teaspoon of the salt and cook, while stirring, until it is well-combined, about 3-4 minutes.

Step 4 –In a large baking dish, add the potato slices and sprinkle both sides with the salt and the black pepper.

Step 5 –Add 1/2 cup of the garlic oil to the seasoned potato slices and gently toss to coat.

Step 6 –Place the coated potato slices onto the prepared grill grates.

Step 7 –Use a heatproof pastry brush to coat the potato slices with the remaining garlic oil.

Step 8 –Grill the potato slices, flipping once, until they are golden-brown, about 5 minutes per side.

Step 9 –Serve.
