Healthier Pumpkin Loaf

Ingredients

For the bread:

  • 5 tablespoons grass-fed butter, melted and cooled
  • 1 ripe banana, mashed
  • 6 large eggs
  • 1 cup pumpkin purée
  • 2 teaspoons vanilla extract
  • 3 tablespoons pure maple syrup
  • 2 tablespoons whole milk
  • 1/2 cup coconut flour
  • 1/4 cup arrowroot powder/flour
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon unrefined salt
  • 1 teaspoon aluminum-free baking powder
  • 1/2 teaspoon baking soda

For the frosting:

  • 6 ounces cream cheese, softened
  • 3 tablespoons butter, softened
  • 2 tablespoons pure maple syrup
  • 1/4 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon, plus more for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease and line a loaf pan with parchment paper.

Step 3 –In a large bowl, whisk 5 tablespoons of the butter, the banana, the eggs, the pumpkin, 2 teaspoons of the vanilla, 3 tablespoons of the maple syrup, and the milk together.

Step 4 –Sift the coconut flour, the arrowroot powder, the pumpkin pie spice, the salt, the baking powder, and the baking soda over the wet ingredient mixture.

Step 5 –Whisk the batter until it is smooth.

Step 6 –Let the batter rest for 2 minutes, then whisk again.

Step 7 –Scrape the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 45 minutes-1 hour 10 minutes.

Step 8 –Allow the pan to cool on a cooling rack for 10 minutes.

Step 9 –Transfer the bread from the pan onto the rack and allow it to cool completely.

Step 10 –While the bread cools, in a small bowl using an electric mixer, beat the cream cheese, the remaining butter, the remaining syrup, the remaining vanilla, and the cinnamon together until it is completely smooth.

Step 11 –Spread the frosting on top of the cooled bread and sprinkle with the cinnamon.

Step 12 –Slice and serve.
