After raw chicken is purchased, it’s going to be refrigerated for 1 to 2 days. However, food safety experts together with the FDA recommend a timeframe of 1-2 days for raw chicken held at or above 41o F.

Remember that freezer-burned chicken can still be cooked & eaten, it just is going to be less appetizing than un-freezer-burned chicken. Before cooking Use a thermometer to check the temperature. 

You’re hoping for a temperature of 140 degrees Fahrenheit. Place the frozen chicken breast in the water. Every now and then, stir the water (this keeps pockets of cold water from forming). It should only take 30 minutes or less to defrost.

Most chicken sold in the U.S. is contaminated with the salmonella bacterium. If raw chicken stays at a temperature too long, it’ll warm up to temperature & therefore the salmonella will begin to grow & reproduce; which is toxic to humans.

 The longer it’s warm without being cooked, the more toxins are going to be formed, & also the sicker we might get once we eat it.

If the bacterium gets heated high enough, with an inside temperature of about 165oF, it dies. If the chicken was kept cold enough before cooking, the bacterium dies without ever having produced the toxin, so we do not get sick. 

If on the opposite hand the cooking is interrupted, & therefore the chicken stands warm when there’s still living bacteria, it’ll grow & make the toxin. So eating it, even after we finished cooking it, will lead us to sickness.
