Life-Saving Fried Rice

When the week starts truly getting hectic, you need a meal that you can make without breaking a sweat (or the bank). Life-Saving Fried Rice only asks that you pour the ingredients in a baking dish, stir, and bake. The result is a fluffy and hearty rice dish with crispy bacon and the savory, tangy, and sweet flavors of fried rice — without the frying pan. Mixed with tender vegetables, Life-Saving Fried Rice is a complete meal in one dish, so you can be a hero at dinnertime while staying on top of your schedule!

Ingredients

For the rice:

  • 1 1/2 cups long-grain white rice
  • 2 cups chicken stock
  • 1 1/2 tablespoons light soy sauce
  • 1 tablespoon Chinese cooking wine
  • 2 cloves garlic, minced
  • 2 cups frozen diced vegetables
  • 1/4 teaspoon white pepper
  • 1 1/4 cups bacon, chopped

For the topping:

  • 1 tablespoon sesame oil
  • 1/2 cup green onion, finely sliced

Directions

Step 1 –Preheat the oven to 390 degrees F.

Step 2 –Place the white rice, the chicken stock, the soy sauce, the Chinese cooking wine, the garlic, the frozen vegetables, and the white pepper in a 9×13-inch baking dish and stir, spreading the rice evenly throughout the pan.

Step 3 –Scatter the bacon on top of the rice mixture.

Step 4 –Cover the baking dish with foil and bake for 40 minutes.

Step 5 –Remove the foil and bake until the bacon has darkened in color, the liquid is absorbed, and the rice is cooked but still appears wet.

Step 6 –Transfer the baking dish from the oven and let it rest loosely covered with foil for 10 minutes.

Step 7 –Add the sliced green onions and the sesame oil over top.

Step 8 –Fluff the rice and serve!
