Ingredients

For the beef:

  • 1/4 cup extra-virgin olive oil
  • juice of 1/2 lemon
  • 2 tablespoons packed brown sugar
  • 1 tablespoon Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 (2-pound) London broil top-round steak
  • kosher salt, to taste
  • freshly ground black pepper, to taste

For the herb butter:

  • 1 stick butter, softened
  • 1 tablespoon parsley, freshly chopped
  • 2 teaspoons chives, freshly chopped
  • zest of 1/2 lemon
  • 1/2 teaspoon kosher salt
  • crushed red pepper flakes, to taste

Directions

Step 1 –In a medium bowl, whisk together the oil, lemon juice, brown sugar, Worcestershire sauce, and garlic.

Step 2 –Season the steak generously with salt and pepper.

Step 3 –Rub the oil mixture all over the steak.

Step 4 –Let the steak sit at room temperature for at least 1 hour or refrigerate up to overnight.

Step 5 –Preheat the broiler.

Step 6 –Brush off the garlic.

Step 7 –Place the steak on a sheet pan.

Step 8 –Place the pan on the top rack of the oven closest to the heating element.

Step 9 –Broil the steak until the top is lightly charred, about 6-7 minutes.

Step 10 –Flip the steak and continue broiling until the internal temperature reaches 135 degrees F, about 4-7 minutes.

Step 11 –Let the steak rest for 10 minutes.

Step 12 –In a small bowl, mix the butter, parsley, chives, lemon zest, salt, and red pepper flakes until smooth.

Step 13 –Carve the steak against the grain.

Step 14 –Serve with the herb butter.
