Ingredients

  • 5 chicken thighs, boneless and skinless, fat trimmed
  • 5 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • sea salt, to taste
  • freshly cracked pepper, to taste

Directions

Step 1 –In a large resealable plastic bag, add the chicken, the olive oil, the lemon juice, the lemon zest, the red wine vinegar, the garlic, the oregano, the salt, and the pepper, seal the bag, and gently toss to coat.

Step 2 –Place the bag in the refrigerator and let the chicken marinate for at least 2 hours and up to overnight.

Step 3 –Preheat the oven to 350 degrees F.

Step 4 –Coat a large oven-safe skillet with cooking spray.

Step 5 –Heat the prepared skillet over medium-high heat.

Step 6 –Place the chicken thighs, smooth-side down, in the pan and cook until golden-brown, about 4 minutes. Reserve the marinade.

Step 7 –Turn the chicken thighs over and place the skillet in the oven.

Step 8 –Cook the chicken thighs until they reach an internal temperature of 165 degrees F, about 8 minutes.

Step 9 –Transfer the chicken thighs to a plate to rest and keep warm, about 5 minutes.

Step 10 –Pour the reserved marinade into the same skillet and cook over high heat until it boils rapidly, about 1-2 minutes.

Step 11 –Serve the chicken thighs drizzled with the marinade sauce.
