Peppercorn Pork Chops

Peppercorn Pork Chops are pretty perfect! It starts with perfectly seasoned pieces of pork that are cooked nice and crispy. Then comes the buttery, creamy gravy-like sauce that features those flavorful peppercorns we mention in the title. We like to plate the tender chops first, then smother them in that warm, savory sauce. Mmm, it’s greatness in every bite. Ingredients

For the pork chops:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 pork chops, bone-in and 1-1/2-inch-thick
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons flour

For the sauce:

  • 1 tablespoon butter
  • 1/4 cup shallots, minced
  • 2 teaspoons black peppercorns, crushed
  • 1 1/4 cups beef broth
  • 1/4 teaspoon dry mustard
  • 1/4 cup heavy cream
  • 1/4 teaspoon salt
  • ground black pepper, to taste
  • 2 tablespoons cornstarch, optional
  • 1 tablespoon water, optional

Directions

Step 1 –In a cast-iron skillet over medium-high heat, heat the olive oil and 1 tablespoon of the butter.

Step 2 –Pat the pork chops dry and season with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper.

Step 3 –Add the flour to a plate and lightly dredge the pork chops on both sides.

Step 4 –Add the coated pork chops to the oil-butter mixture and cook until they reach an internal temperature of 145 degrees F and are lightly golden, about 4-5 minutes.

Step 5 –Transfer the cooked pork chops to a plate to rest.

Step 6 –Add the remaining butter, the shallots, and the crushed peppercorns to the same skillet and stir until the shallots are golden, about 1-2 minutes.

Step 7 –Add the broth and the mustard to the shallot mixture and reduce the heat to medium.

Step 8 –Simmer the sauce until it reduces, about 3-5 minutes.

Step 9 –Add the heavy cream, the remaining salt, and the remaining ground pepper to the sauce mixture and stir to combine. If you prefer the sauce to be thicker, combine the cornstarch and the water in a small bowl until smooth. Then, stir the slurry into the sauce, a little at a time, until the sauce reaches the desired thickness.

Step 10 –Serve the pork chops topped with the gravy.
