Pop-Pop Chicken

Ingredients

For the chicken:

  • 4 chicken breasts, boneless and skinless, cut into bite-size pieces
  • salt, to taste
  • pepper, to taste
  • 1 cup cornstarch
  • 3 large eggs
  • 1/4 cup canola oil

For the sauce:

  • 3/4 cup honey
  • 3/4 cup soy sauce
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 1/2 cup rice wine vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 tablespoon cornstarch
  • sesame seeds, to taste, for garnish

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –Season the chicken pieces with the salt and the pepper.

Step 4 –In a shallow bowl, add 1 cup of the cornstarch.

Step 5 –In another shallow bowl, add the eggs and slightly beat them.

Step 6 –Dip the chicken pieces into the cornstarch and then into the eggs.

Step 7 –Transfer the chicken pieces back into the cornstarch and coat thoroughly.

Step 8 –In a large skillet over medium-high heat, heat the canola oil.

Step 9 –Add the dredged chicken pieces to the oil and cook until they are browned. It’s okay for them not to be cooked all the way through.

Step 10 –Place the browned chicken pieces on the prepared baking dish.

Step 11 –In a medium bowl, add the honey, the soy sauce, the ketchup, the brown sugar, the rice wine vinegar, the sesame oil, the garlic, and the remaining cornstarch and mix to combine.

Step 12 –Pour the sauce over the browned chicken pieces.

Step 13 –Bake the chicken pieces, stirring them every 15 minutes, until they reach an internal temperature of 165 degrees F, about 45 minutes.

Step 14 –Serve the chicken garnished with the sesame seeds.
