Pumpkin Chocolate Chip Cookies

Ingredients

  • 1/2 cup salted butter, softened
  • 1/2 cup brown sugar, packed
  • 1 medium egg
  • 1 teaspoon vanilla extract
  • 1/4 cup pumpkin puree
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 3/4 cup semi-sweet chocolate chips, divided

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a baking sheet with parchment paper or a silicone mat.

Step 3 –In a small bowl, cream together the butter and the sugar until light and fluffy.

Step 4 –Add the egg, the vanilla, and the pumpkin puree, whisking until smooth.

Step 5 –In a large bowl, combine the flour, the baking powder, the baking soda, the cinnamon, and the pumpkin pie spice, whisking until combined.

Step 6 –Pour the wet ingredients mixture into the dry ingredients mixture and beat them together with a hand mixer until just combined.

Step 7 –Fold 1/2 cup of the chocolate chips into the dough.

Step 8 –Use a medium cookie scoop or a tablespoon to scoop the cookie dough onto the prepared baking sheet, about 2 tablespoons per scoop and about 1-inch apart.

Step 9 –Use the back of a spoon to slightly flatten the cookies.

Step 10 –Press the remaining chocolate chips on top of the cookies.

Step 11 –Bake until the edges start to brown, about 10-12 minutes.

Step 12 –Serve.
