Ingredients
- 4 tablespoons unsalted butter
- 1 shallot, minced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/2 cup Gruyère cheese, shredded
- 1/4 cup parmesan, grated
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1 (16-ounce) package frozen chopped spinach, thawed and squeezed dry
Directions
Step 1 –Melt the butter in a large skillet over medium heat.
Step 2 –Add the shallot and the garlic to the butter and cook, stirring frequently, until the shallots have become translucent, about 2-3 minutes.
Step 3 –Whisk the flour into the garlic mixture until it is lightly browned, about 1-2 minutes.
Step 4 –Gradually whisk the heavy cream and the milk into the flour mixture and cook, whisking constantly, until the sauce begins to thicken, about 5 minutes.
Step 5 –Stir the Gruyère and the parmesan into the sauce mixture until they have melted, about 1-2 minutes.
Step 6 –Season the sauce with the salt and the pepper.
Step 7 –Stir the spinach into the sauce until it is well combined and heated through, about 2-3 minutes.
