Hit the snooze button on boring breakfast fare! Snoozefest Pizza will have you up and at ’em to start the day off right! A super easy, homemade crust is quickly put together, then topped with baby spinach, mozzarella cheese, cherry tomatoes, an egg, and some savory bacon pieces for the breakfast of (wide-awake) champions! Don’t sleep on this one, Snoozefest Pizza will reawaken your love for a great breakfast. And overnight your whole family will become morning people again! You snooze, you lose!

Ingredients

  • 1 cup all-purpose flour, plus more, to taste, for dusting a work surface, can substitute white whole-wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt, plus more, to taste
  • 1 cup non-fat Greek yogurt, liquid on top drained
  • baby spinach, to taste
  • 1/2 cup mozzarella cheese, shredded
  • 8 cherry tomatoes, sliced
  • 4 large eggs
  • 2 strips center-cut bacon, cooked and chopped
  • black pepper, to taste

Directions

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Line an 18×26-inch baking sheet with parchment paper, then coat it with nonstick cooking spray.

Step 3 –In a medium bowl, add 1 cup of the flour, the baking powder, and 1/2 teaspoon of the salt and whisk well to combine.

Step 4 –Add the Greek yogurt to the flour mixture and use a fork or a spatula mix to until it is well-combined. It will look like small crumbles.

Step 5 –Use the extra flour to lightly dust a work surface.

Step 6 –Add the dough to the work surface and knead a few times until it is tacky but not sticky, about 20 turns. It should not stick to your hand when pulled away.

Step 7 –Divide the dough into 4 equal balls, about 3.8 ounces each.

Step 8 –Use more of the extra flour to lightly dust the work surface and the rolling pin.

Step 9 –Use the prepared rolling pin to roll each of the dough balls into thin ovals with a 7-inch diameter. Place them on the prepared baking sheet.

Step 10 –Leaving the centers of the dough ovals open, evenly divide the spinach, the mozzarella, and the tomatoes between each of them.

Step 11 –Gently break 1 of the eggs in the center of each of the dough ovals and evenly sprinkle each with the bacon.

Step 12 –Bake the pizzas until the crusts are golden and the eggs are set, about 10-12 minutes.

Step 13 –Place the baking sheet on a wire rack and season the pizzas with the extra salt and the black pepper.

Step 14 –Serve.
