Spring Skewers

We don’t know about you, but the moment the temperature starts to get warmer we immediately head out to preheat our grill. Like, it’s just been far too long since we’ve experienced some juicy meat cooked our favorite way, so it simply has to happen ASAP! If you’re like us and look forward to this special time every year, then you need a special, festive dish to have on hand when you finally reach that moment you’ve been waiting for! Our go-to favorite is these Spring Skewers! They’re loaded with flavorful, perfectly grilled chicken and fresh, juicy veggies for a quick, easy, and absolutely delicious taste of the warmer weather that is upon you! Get out of the house and experience a little bit of warmth on your face because the sun is back… and so is grilling season! Kick it off in the most delicious way with some Spring Skewers!

Ingredients

  • 1/4 cup olive oil
  • 1 tablespoon white wine vinegar
  • 2 cloves garlic, minced
  • 2 teaspoons lemon zest, grated
  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 1 1/2 pounds chicken breasts, boneless and skinless, cut into 1 1/2-inch pieces
  • 3 medium zucchinis, halved lengthwise and cut into 1 1/2-inch slices
  • 3 medium onions, cut into wedges
  • 12 cherry tomatoes, optional

Directions

Step 1 –In a large bowl, whisk the olive oil, the vinegar, the garlic, the lemon zest, the lemon juice, the salt, the sugar, the oregano, and the pepper together, setting aside 1/4 cup for basting.

Step 2 –In a large bowl, add 1/2 of the marinade and the chicken and turn to coat.

Step 3 –In another large bowl, add the remaining marinade, the zucchinis, the onions, and the tomatoes, turning to coat.

Step 4 –Cover and refrigerate the chicken and the vegetables for at least 4 hours and up to overnight.

Step 5 –Preheat the grill to medium heat.

Step 6 –Drain the chicken and the vegetables and discard the marinade from the bowls.

Step 7 –Alternately thread the chicken and the vegetables onto metal skewers or soaked wooden skewers.

Step 8 –Grill the skewers, covered, while occasionally basting with the reserved marinade, until the chicken’s internal temperature reaches 165 degrees F, about 6 minutes per side.

Step 9 –Transfer the skewers from the grill and serve.
