Super Simple Pancakes

Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon kosher salt
  • 1 1/2 cups milk, plus more, to taste
  • 1 egg
  • 1 teaspoon vanilla extract, optional
  • butter, to taste

Directions

Step 1 –Preheat a griddle to 325 degrees F or heat a skillet over medium-high heat.

Step 2 –In a large bowl, whisk the flour, the sugar, the baking powder, the baking soda, and the salt together.

Step 3 –In a large bowl, mix 2 cups of the pancake mixture, the milk, the egg, and the vanilla together with a wooden spoon until most but not all of the lumps are gone and the batter is smooth and forms a pourable consistency. If it is too thick, add more of the milk.

Step 4 –Coat the griddle with the butter.

Step 5 –Pour 1/4 cup of the batter in circles on the hot griddle and cook until bubbles appear, about 2 minutes.

Step 6 –Flip the pancakes and cook just until lightly browned on the bottom, about 1 minute.

Step 7 –Transfer the cooked pancakes to a plate and stack them to help keep warm.

Step 8 –Repeat with the remaining batter.

Step 9 –Serve immediately.
