Thanksgiving Hash

Everyone thinks about what’s for dinner on Thanksgiving, but breakfast often ends up not receiving the same attention. Breakfast is the most important meal of the day! It deserves something special. Thanksgiving Hash gets the festivities started early with a savory and hearty breakfast mix loaded with all your favorites. Creamy sweet potatoes add notes of caramel, sausages bring the spice and the meatiness, and fried eggs are just fun all on their own! With sautéed vegetables for extra crunch and brightness, Thanksgiving Hash will make you thankful that you started the holiday in the best way possible!

Ingredients

  • 2 teaspoons olive oil
  • 1 pound breakfast sausage, casings removed
  • 1/2 cup red onion, diced
  • 1 red pepper, diced
  • 1 green bell pepper, diced
  • 1 teaspoon garlic, minced
  • 1 pound sweet potatoes, peeled, cut into 1-inch pieces, and cooked until tender
  • salt, to taste
  • pepper, to taste
  • 4 fried eggs
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1 –Heat the olive oil in a large skillet over medium-high heat.

Step 2 –Add the sausage to the hot oil and cook, while crumbling, until cooked through, about 5-6 minutes.

Step 3 –Add the onion to the cooked sausage and cook, stirring occasionally, until softened, about 3-4 minutes.

Step 4 –Add the red bell peppers and the green bell peppers to the sausage mixture and cook until just tender, about 2-3 minutes.

Step 5 –Add the garlic to the sausage mixture and cook until fragrant, about 30 seconds.

Step 6 –Add the sweet potatoes and cook until the sweet potatoes are lightly browned, about 5-6 minutes.

Step 7 –Season the hash with the salt and the pepper, to taste.

Step 8 –Place the eggs on top of the hash.

Step 9 –Garnish with the parsley and serve.
