Ingredients

  • 1 cup pineapple juice
  • 1/2 cup buttermilk
  • 6 tablespoons unsalted butter, melted
  • 1/3 cup honey
  • 5 1/2 cups all-purpose flour, spooned and leveled, plus more, to taste, for dusting a work surface
  • 1 tablespoon instant yeast
  • 2 teaspoons salt
  • 1 large egg, lightly beaten
  • 1 tablespoon vanilla extract
  • oil, to taste, for greasing the proofing bowl and the baking pan
  • 4 tablespoons honey butter, homemade or store-bought, melted

Directions

Step 1 –In a large liquid measuring cup, add the pineapple juice, the buttermilk, the butter, and the honey and whisk to combine.

Step 2 –Microwave the buttermilk mixture in 30-second intervals until it reaches a temperature of 110 degrees F; it is normal if the mixture curdles.

Step 3 –In the bowl of a stand mixer fitted with a dough hook, add 5 1/2 cups of the flour, the yeast, and the salt and mix on low speed until combined.

Step 4 –With the mixer on low speed, gradually pour the buttermilk mixture, the egg, and the vanilla into the flour and mix on low speed until a dough begins to come together, about 2 minutes.

Step 5 –Increase the speed to medium-low and mix the dough until it no longer sticks to the sides of the bowl; it may still stick to the bottom.

Step 6 –Using the extra flour, lightly dust a work surface.

Step 7 –Turn the dough out onto the prepared work surface and shape it into a ball.

Step 8 –Using the oil, lightly grease a glass bowl.

Step 9 –Place the dough ball in the prepared bowl and cover it with plastic wrap.

Step 10 –Set the bowl in a warm place and allow the dough to rise until it doubles in size, about 1 hour 30 minutes.

Step 11 –Punch the dough down to deflate it.

Step 12 –Using more of the extra flour, lightly dust another work surface.

Step 13 –Transfer the dough to the prepared work surface and divide it into 15 equal portions.

Step 14 –Shape each dough portion into a smooth ball.

Step 15 –Using the oil, lightly grease a 9×13-inch baking pan.

Step 16 –Arrange the dough balls in the prepared baking pan.

Step 17 –Cover the pan with plastic wrap and set it in a draft-free area to rise until the dough balls have doubled in size, about 1 hour 30 minutes.

Step 18 –Adjust an oven rack to the lower-middle position.

Step 19 –Preheat the oven to 375 degrees F.

Step 20 –Remove the plastic wrap and brush the tops of the rolls with about 1/2 of the melted honey butter.

Step 21 –Bake the rolls, rotating halfway through baking, until the tops are golden-brown, about 20 minutes.
