Tom’s Turkey Melties

If you want to spruce up your lunch a little, Tom’s Turkey Melties are the way to go! Nothing can be better than these buttery slices of toasted sourdough bread that hug melty cheese, crispy bacon, salty turkey, and juicy tomato slices. The tangy and creamy mayo you spread all over will really open your eyes to everything you’ve been missing! Get even more excited for the metaphorical lunch bell with Tom’s Turkey Melties!

Ingredients

For the red wine vinegar mayonnaise:

  • 4 tablespoons mayonnaise
  • 2 teaspoons red wine vinegar
  • freshly ground pepper, to taste

For the melties:

  • 6 strips bacon
  • 1/2 pound sliced deli turkey
  • 2 tablespoons butter
  • 4 slices sourdough bread
  • 4 slices Monterey Jack cheese
  • 1 medium tomato, sliced

Directions

Step 1 –In a small bowl, add the mayonnaise, the red wine vinegar, and the black pepper and mix together. Set it aside.

Step 2 –In a large skillet over medium heat, cook the bacon strips, flipping occasionally, until they are crispy.

Step 3 –Transfer the bacon strips to a paper-towel-lined plate.

Step 4 –Place the turkey slices on a microwave-safe plate and heat in the microwave until they are warm, about 30 seconds-1 minute.

Step 5 –Spread 1/2 tablespoon of the butter on one side of each of the bread slices.

Step 6 –On the bare side of 2 of the bread slices, top each with 2 slices of the cheese, 1/2 of the warmed turkey, 3 strips of the cooked bacon, and 1/2 of the tomato slices.

Step 7 –Spread 1/2 of the reserved mayonnaise mixture over the clean side of the 2 remaining bread slices. Place them, mayonnaise-side down, on top of the sandwiches.

Step 8 –In a clean skillet over medium-low heat, add the sandwiches, one at time, and cook, flipping once, until they are golden-brown and the cheese has melted.

Step 9 –Slice the sandwiches and serve.
