Ingredients
- 8 slices bacon
- 1 (16-ounce) package frozen hash browns
- 8 large eggs
- 1/3 cup milk
- 4 tablespoons butter
- kosher salt, to taste
- freshly ground black pepper, to taste
- 4 large flour tortillas
- 1/2 cup cheddar, shredded
- 1 ripe avocado, sliced
- hot sauce, to taste, for serving

Directions
Step 1 –In a large skillet over medium heat, cook the bacon until crispy.
Step 2 –Drain the bacon on a paper-towel-lined plate and pour off half the fat from the skillet.
Step 3 –Cook the hash browns in the bacon fat according to the package directions. Transfer to a plate.
Step 4 –In a medium bowl, whisk the eggs and the milk together.
Step 5 –Carefully wipe out the skillet and place it over medium heat.
Step 6 –Add the butter to the skillet and melt until it just starts to foam.
Step 7 –Reduce the heat to medium-low, add the egg mixture to the butter, and cook, while stirring occasionally with a rubber spatula, until soft curds form.
Step 8 –Season the eggs with the salt and the pepper.
Step 9 –In the center of the tortillas, layer the hash browns, the eggs, the cheese, 2 slices of the bacon, and the sliced avocado.
Step 10 –Fold the two sides of the tortillas in and roll them up tightly.
Step 11 –Serve the burritos with the hot sauce.
