Best Oven Baby Potatoes

Loved by basically everyone, these baby potatoes are generously seasoned and then roasted to fork-tender perfection. Ingredients

  • 3 pounds baby potatoes, cut to similar size if needed
  • 3 tablespoons olive oil
  • 1/4 cup fresh herbs, such as sage, rosemary, and/or thyme, chopped, plus more, to taste, for garnish
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt, plus more, to taste
  • 1/2 teaspoon black pepper, plus more, to taste
  • 2 tablespoons butter, melted, optional

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large bowl, add the potatoes, the olive oil, 1/4 cup of the herbs, the garlic, 1/2 teaspoon of the salt, 1/2 teaspoon of the black pepper, and the butter and toss to coat.

Step 3 –Evenly spread the seasoned potatoes into a 9×13-inch baking dish and roast, about 20 minutes.

Step 4 –Transfer the baking dish to a wire rack and stir the seasoned potatoes to coat.

Step 5 –Transfer the seasoned potatoes to the oven and bake until they are fork-tender and golden-brown, about 25 minutes.

Step 6 –Sprinkle the roasted potatoes with the extra herbs, the extra salt, and the extra pepper and stir to combine.

Step 7 –Serve.
