Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 egg
  • 2/3 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup raisins

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease 12 muffin cups or line them with paper muffin liners.

Step 3 –Mix together the wheat bran and buttermilk.

Step 4 –Let the bran and buttermilk mixture stand for 10 minutes.

Step 5 –Beat together the oil, egg, brown sugar, and vanilla in a separate bowl.

Step 6 –Add the sugar mixture to the buttermilk/bran mixture.

Step 7 –Sift together the flour, baking soda, baking powder, and salt.

Step 8 –Stir the flour mixture into the buttermilk mixture, until just blended and careful not to overmix.

Step 9 –Fold in the raisins.

Step 10 –Spoon the batter into the prepared muffin tins.
