Gobble Gobble Oatmeal

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1 1/2 cups unsweetened almond milk
  • 1 cup canned pumpkin
  • 1/4 cup pure maple syrup, plus more for serving
  • 1 tablespoon ground flaxseed
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans or walnuts, chopped and divided

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease an 8-inch square baking dish with cooking spray.

Step 3 –In a large bowl, mix the oats, the baking powder, the pumpkin pie spice, the cinnamon, and the salt, stirring to combine.

Step 4 –Add the milk, the pumpkin, the maple syrup, the flaxseed, the coconut oil, and the vanilla to the oat mixture, stirring well to combine.

Step 5 –Gently fold 1/4 cup of the nuts into the oatmeal mixture.

Step 6 –Carefully pour the oatmeal mixture into the prepared baking dish.

Step 7 –Sprinkle the remaining nuts on top of the oatmeal mixture.

Step 8 –Bake until the top is golden and set, about 30-35 minutes.

Step 9 –Transfer from the oven and allow to cool for 2-3 minutes.

Step 10 –Serve with the extra maple syrup.
