Mini-Chip Muffins

These things are the epitome of pure joy! When you eat Mini-Chip Muffins, there’s no way to eat just one; you need to keep popping them, so you don’t miss out on the tender, golden-brown sweetness, or the bursts of melty chocolate in each bite. These are perfect for passing out at brunch, or for bringing to work to impress your coworkers, or for pairing with breakfast over the next few days. After all, Mini-Chip Muffins make enough for everyone and they’re ready in a flash, but that doesn’t mean you’ll want to share!

Ingredients

  • 1 large egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/4 cup mini chocolate chips

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Spray a miniature muffin tin with cooking spray.

Step 3 –Pour the egg and milk into a large mixing bowl and stir until the egg is beaten.

Step 4 –Add the oil and the vanilla extract to the bowl and stir again.

Step 5 –Add the granulated sugar and the brown sugar to the bowl and stir well.

Step 6 –Add the all-purpose flour, the baking powder, and the salt to the bowl and stir until no large lumps remain.

Step 7 –Add 1 cup of the chocolate chips to the bowl and stir to incorporate.

Step 8 –Spoon the batter into the prepared muffin tins, filling each cup about 2/3 of the way full.

Step 9 –Sprinkle the remaining mini chocolate chips on top of the muffin batter in each tin.

Step 10 –Bake until a toothpick inserted into the center of the muffins comes out clean, about 10-12 minutes.

Step 11 –Allow the muffins to cool in the pan for 5 minutes.

Step 12 –Transfer the muffins to a wire rack to cool completely.

Step 13 –Serve.
