Ingredients

For the soup:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 medium celery stalk, chopped
  • 1 medium carrot, sliced
  • 1 jalapeño, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 2 (15-ounce) cans black beans, drained
  • 1 (14.5-ounce) can chicken broth
  • 1/2 teaspoon salt
  • 2 cups water
  • 2 tablespoons fresh lime juice

Optional toppings:

  • 1/2 cup fresh cilantro leaves, loosely packed
  • lime wedges, to taste
  • sour cream, to taste

Directions

Step 1 –In a 4-quart saucepan over medium heat, heat the oil until it is hot.

Step 2 –Add the onion, the celery, the carrot, and the jalapeño to the oil and cook, stirring occasionally, until they are tender, about 10 minutes.

Step 3 –Add the garlic and the cumin to the veggie mixture and stir for 1 minute.

Step 4 –Stir the beans, the broth, the salt, and the water into the veggie mixture and bring to a boil over high heat.

Step 5 –Reduce the heat to low and simmer the soup, uncovered, about 15 minutes.

Step 6 –Transfer the saucepan from the heat.

Step 7 –Carefully use an immersion blender to blend the soup in the saucepan until it is almost smooth.
