Summer Heaven Corn on the Cob

Ingredients

For the garlic butter:

  • 2 sticks unsalted butter, slightly softened
  • 8 cloves garlic, peeled and coarsely chopped
  • 1/4 habanero pepper, seeded
  • 1/4 bunch fresh chives
  • salt, to taste
  • black pepper, to taste

For the cob:

  • 8 ears corn
  • 1/2 cup cotija cheese, grated
  • 4 fresh limes, quartered
  • 2 tablespoons chives, chopped, for garnish

Directions

Step 1 –Preheat the grill to medium.

Step 2 –Combine the butter, the garlic, the habanero, and 1/4 bunch of the chives in a food processor and process until smooth.

Step 3 –Season the butter with the salt and the pepper.

Step 4 –Peel back the husks of the corn without removing them.

Step 5 –Remove the silks of the corn and recover the corn with the husks.

Step 6 –Soak the corn in a large bowl of cold water for 30 minutes.

Step 7 –Transfer the corn from the water, shaking off the excess.

Step 8 –Place the corn on the grill and close the cover, cooking the corn until it is bold in color and cooked through, about 15-20 minutes.

Step 9 –Unwrap the corn and brush it with the garlic butter.

Step 10 –Sprinkle the corn with the cotija cheese and squeeze the limes over them.

Step 11 –Sprinkle with the remaining chives and serve.
