Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons fresh thyme, minced, or 3/4 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon fresh rosemary, minced, or 1/4 teaspoon dried rosemary, crushed
  • 1/4 teaspoon pepper
  • 6 chicken thighs, bone-in
  • 6 chicken drumsticks
  • 1 pound baby red potatoes, halved
  • 1 medium lemon, sliced
  • 2 tablespoons fresh parsley, minced

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –In a small bowl, whisk the olive oil, the lemon juice, the garlic, the thyme, the salt, the rosemary, and the pepper together until combined.

Step 3 –Pour 1/4 cup of the marinade into a large bowl or a shallow dish.

Step 4 –Add the chicken thighs and the chicken drumsticks to the bowl and turn the pieces to coat.

Step 5 –Refrigerate the chicken and allow it to marinate for 30 minutes. Cover and refrigerate the remaining marinade as well.

Step 6 –Drain the chicken and discard the remaining marinade in the bowl.

Step 7 –Place the marinated chicken in a 15×10-inch baking pan.

Step 8 –Add the potatoes to the same pan in a single layer.

Step 9 –Drizzle the reserved marinade over the potatoes and top them with the lemon slices.

Step 10 –Bake until a thermometer inserted into the chicken reads 170-175 degrees F internally and the potatoes are tender, about 40-45 minutes. Optionally, broil the chicken 3-4 inches from the heat until deep golden-brown in color, about 3-4 minutes.

Step 11 –Sprinkle the chicken dish with the parsley and serve.
