Gluten-Free Fudgy Brownies

Ingredients

For the gluten-free flour mix:

  • 3 cups white rice flour
  • 3 cups potato starch
  • 2 cups sorghum flour
  • 4 teaspoons xanthan gum

For the brownies:

  • 1/2 cup butter
  • 3 ounces unsweetened chocolate, coarsely chopped
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon gluten-free vanilla extract
  • 2/3 cup gluten-free flour mix, see recipe above
  • 1/4 teaspoon baking soda
  • 1/2 cup nuts, optional, chopped, to taste

For the chocolate cream cheese frosting:

  • 1 cup semisweet chocolate, cut into small pieces
  • 2 (3-ounce) packages cream cheese, softened
  • 1/2 cup powdered sugar

Directions

Step 1 –In a large air-tight container with a lid, add the white rice flour, the potato starch, the sorghum flour, and the xanthan gum, whisking to combine.

Step 2 –Measure out the 2/3 cup gluten-free flour mix needed for the brownies and set it aside.

Step 3 –Cover the remaining flour and store it at room temperature for up to 3 months.

Step 4 –Preheat the oven to 350 degrees F.

Step 5 –Line an 8x8x2-inch baking pan with greased aluminum foil, extending the foil over edges of the pan.

Step 6 –In a medium saucepan over low heat, add the butter and the unsweetened chocolate and cook, stirring constantly, until melted and smooth.

Step 7 –Transfer the chocolate mixture from the stovetop to a wire rack and let cool.

Step 8 –Add the granulated sugar to the cooled chocolate mixture and stir to combine.

Step 9 –One at a time, add the eggs to the chocolate mixture and beat with a wooden spoon after each addition, until just combined.

Step 10 –Add the vanilla extract to the chocolate mixture and stir to combine.

Step 11 –In a small bowl, whisk the gluten-free flour mix and the baking soda, together.

Step 12 –Add the flour mixture to the chocolate mixture and stir until just combined.

Step 13 –Add the nuts to the chocolate mixture and stir to combine.

Step 14 –Evenly transfer the batter to the prepared baking dish.

Step 15 –Transfer the batter to the oven and bake until just baked through, about 30 minutes.

Step 16 –Transfer the brownies from the oven to a wire rack and let cool.

Step 17 –While the brownies are cooling, in a small sauce pan over low heat, add the semisweet chocolate pieces and cook, stirring constantly, until melted and smooth.

Step 18 –Transfer the melted chocolate from the stovetop to a wire rack and let cool.

Step 19 –In a medium bowl with a hand mixer, add the cream cheese and the powdered sugar together and beat until well-combined.

Step 20 –Add the melted chocolate to the cream cheese mixture and beat until smooth and well-combined.

Step 21 –Evenly add the frosting to the top of the baked brownies.

Step 22 –Using the edges of the foil, lift the uncut, frosted brownies out of the baking dish.

Step 23 –On a cutting board with a sharp knife, cut the brownies into serving-size pieces.

Step 24 –Plate and serve.
