Skinny California Roll-Ups

Looking for a lighter lunch or dinner? Well, let’s wrap this up for the week! Skinny California Roll-Ups are a wonderful change of pace that will also help curb the urge for weekend sushi. Whole-wheat tortilla wraps are loaded with crabmeat and a tasty brown rice mixture that’s topped with juicy tomatoes, chilled cucumbers, and creamy avocados. All that is tightly wrapped to keep the delicious flavors all smushed together. These Skinny California Roll-Ups will perk up any meal and get you rolling towards the weekend. There you have it; the perfect answer to a perfect weekday meal. And that’s a wrap!

Ingredients

  • 2 cups brown rice, cooked
  • 3 teaspoons sesame seeds
  • 8 whole-wheat tortillas
  • 1 (8-ounce) package imitation crabmeat
  • 1/2 cup tomato, diced
  • 1/2 cup cucumber, diced
  • 1 avocado, diced
  • 1/4 cup reduced-sodium soy sauce, for serving

Directions

Step 1 –In a small bowl, combine the cooked brown rice and the sesame seeds.

Step 2 –Place each of the tortillas on a piece of butcher paper.

Step 3 –In the center of each of the tortillas, add 1/8 of the brown rice mixture, 1 ounce of the crabmeat, and then top each with 1/8 of the tomatoes, 1/8 of the cucumbers, and 1/8 of the avocados.

Step 4 –Fold in the sides of the tortillas and tightly roll up the wrap. Wrap the butcher’s paper around each wrap, then tie twine around the center of each to ensure they stay rolled up.

Step 5 –Repeat the filling and rolling of the wraps with the remaining ingredients.

Step 6 –Serve with the soy sauce.
