Ingredients
For the chicken:
- 1 pound chicken breasts, boneless and skinless, cut into 1-inch chunks
- kosher salt, to taste
- freshly ground black pepper, to taste
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- For the sauce:
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tablespoons hoisin sauce
- 1 tablespoon ginger, freshly grated
- 1 tablespoon sriracha
- rice, optional, to taste, cooked, for serving
- 2 green onions, thinly sliced, for garnish
- 2 teaspoons sesame seeds, for garnish
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Lightly oil a 9×13 baking dish.
Step 3 –Season the chicken pieces with the salt and the pepper.
Step 4 –Place the eggs and the panko into two separate shallow bowls.
Step 5 –Working in batches, dip the chicken pieces into the eggs and then dredge them in the panko and press to coat.
Step 6 –Place the chicken pieces in the prepared baking dish and bake until they reach an internal temperature of 165 degrees F and are golden-brown and crisp, about 15-20 minutes.
Step 7 –While the chicken pieces bake, in a medium saucepan over medium-high heat, combine the soy sauce, the honey, the garlic, the hoisin sauce, the ginger, and the sriracha until it thickens slightly, about 1-2 minutes.
Step 8 –Stir the cooked chicken into the sauce and gently toss to combine.
Step 9 –Serve the chicken with the sauce over the rice and garnish with the green onions and the sesame seeds.
