Stuffin’ Muffins

Stuffin’ Muffins gives that boring ‘ole side dish a fun twist for the better! You’ll trade out your casserole dish for some muffin tins to create what appears to be a gourmet version of the traditional side. But don’t worry, the production is certainly not on that level—it’s so easy! You’ll taste all the familiar flavors as you bite into one of these savory muffins: crunchy bread cubes, tender celery and onions, and hints of salty chicken broth. What might be new to you are the bits of spicy sausage sprinkled throughout which adds some protein and extra satisfaction! Make your meal feel a little fancier with these tender, fluffy Stuffin’ Muffins!

Ingredients

  • 1 pound ground sausage
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 cups bread cubes
  • 1 large egg, lightly beaten
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon poultry seasoning
  • 2 cups chicken broth

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat two 12-cup muffin tins with nonstick cooking spray.

Step 3 –In a large skillet over high heat, add the sausage and cook, while stirring and breaking up the meat, until it is no longer pink.

Step 4 –Transfer the cooked sausage from the pan and set aside. Keep the remaining drippings in the pan.

Step 5 –In the same skillet over medium-high heat, add the butter and the olive oil.

Step 6 –Add the onion, the garlic, the celery, the salt, and the pepper to the butter mixture and sautĂ©, while stirring frequently, until the veggies are softened, about 3-5 minutes.

Step 7 –In a large bowl, add the tender veggies, the cooked sausage, and the bread cubes.

Step 8 –In another bowl, whisk together the beaten egg, the parsley, the thyme, the sage, the poultry seasoning, and the chicken broth.

Step 9 –Pour the egg mixture over the bread cubes mixture and stir together.

Step 10 –Add enough stuffing to fill each well of the prepared muffin tins, packing them tightly.

Step 11 –Bake until the tops are golden brown and the internal temperature reads at least 160 degrees F, about 30-40 minutes.

Step 12 –Allow the muffins to cool for a few minutes in the pans.

Step 13 –Using a butter knife, pop the muffins out of the tins.

Step 14 –Serve immediately.
