Ingredients

  • 1 1/4 cups quick-cooking oats, divided
  • 1 medium onion, chopped
  • 1/2 cup carrot, shredded
  • 1/2 cup fat-free milk
  • 1/4 cup egg substitute
  • 1/4 cup plus 2 tablespoons ketchup, divided
  • 1 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 2 pounds lean ground turkey

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Combine the 1 cup of quick-cooking oats, the onion, the shredded carrot, the fat-free milk, the egg substitute, the 2 tablespoons of ketchup, the garlic powder, the pepper, and the turkey and mix lightly but thoroughly.

Step 3 –Transfer the meat loaf to a 9×5-inch loaf pan coated with cooking spray.

Step 4 –Mix the 1/4 cup ketchup and the 1/4 cup quick-cooking oats, and spread the topping over the loaf.

Step 5 –Bake until a thermometer reads 165 degrees F, about 60-65 minutes.

Step 6 –Let stand for 10 minutes, then slice.
