Ingredients
- olive oil, to taste, for greasing the dish
- 2 cups jarred marinara sauce
- 1/3 cup mascarpone cheese
- 1/4 cup fresh Italian parsley leaves, chopped
- 2 teaspoons fresh thyme leaves, chopped
- 1 (16-ounce) package cheese tortellini
- 2 ounces smoked mozzarella, thinly sliced
- 1/4 cup parmesan, freshly grated
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Lightly grease an 8×8-inch baking dish with the olive oil.
Step 3 –Whisk the marinara sauce, the mascarpone cheese, the parsley, and the thyme in a large bowl until blended.
Step 4 –Cook the tortellini according to the package directions.
Step 5 –Drain the tortellini and add it to the sauce, tossing to coat.
Step 6 –Transfer the tortellini mixture to the prepared baking dish.
Step 7 –Top the tortellini mixture with the mozzarella and the parmesan.
Step 8 –Cover the baking dish and bake until the cheese melts and the sauce is bubbly, about 30 minutes.
Step 9 –Serve hot.
