Comforting Tortellini Casserole

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 pound Italian sausage, hot or mild
  • 1 cup yellow onion, diced finely
  • 4 cups lacinato kale, roughly chopped
  • 1 (24-ounce) jar marinara sauce
  • 1/2 cup low-sodium chicken or vegetable broth
  • 1/2 lemon, zested, plus 1 tablespoon lemon juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 (18-ounce) package refrigerated cheese tortellini
  • 1 cup mozzarella, shredded
  • fresh basil leaves, to taste, for garnish

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a large oven-safe skillet over medium-high heat, heat the oil.

Step 3 –Add the sausage and the onion to the hot oil and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes.

Step 4 –Drain the excess fat from the skillet.

Step 5 –Reduce the heat to medium-low.

Step 6 –Add the kale to the sausage-onion mixture and cook, while stirring occasionally, until it has slightly wilted, about 2 minutes.

Step 7 –Add the marinara sauce, the broth, the lemon zest, the lemon juice, the salt, and the pepper to the sausage mixture and stir until well-combined.

Step 8 –Bring the sausage mixture to a simmer.

Step 9 –Transfer the skillet from the heat.

Step 10 –Add the tortellini and gently stir to combine.

Step 11 –Spread the tortellini mixture out into an even layer in the skillet. If you would like to use a casserole dish for serving, transfer the tortellini mixture to the dish.

Step 12 –Top the tortellini mixture with the mozzarella.

Step 13 –Bake until the tortellini are tender and the cheese is golden-brown, about 20 minutes.

Step 14 –Allow the casserole to cool for 5 minutes

Step 15 –Serve topped with the basil leaves.
