Crispy Katsu Pork

Crispy Katsu Pork is one of Japan’s tastiest national dishes and one of its most versatile. You can enjoy the crispy, juicy pork chops with a light breadcrumb coating in simple sandwiches with a bit of mustard, alongside rice and cabbage, or all on its own. Ingredients

  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 pound pork tenderloin, trimmed and cut into 8 pieces, then pounded to about 1/8-inch thickness
  • kosher salt, to taste

Directions

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Place a rack in a rimmed baking sheet.

Step 3 –Beat the eggs in a large bowl.

Step 4 –In a separate large bowl, combine the breadcrumbs and olive oil.

Step 5 –Dip each pork cutlet into the egg, letting any excess drip off.

Step 6 –Dip each cutlet into the breadcrumbs, pressing it lightly so the breadcrumbs adhere.

Step 7 –Place each coated pork cutlet on the prepared rack.

Step 8 –Once all the pork is coated, place the rack in the oven and roast the pork until golden brown and cooked through, about 20-25 minutes.

Step 9 –Sprinkle the pork with 1/4 teaspoon of the kosher salt.

Step 10 –Remove the cutlets from the heat.

Step 11 –Let the pork rest and then serve.
