Snip Fries have some sensational snap to them! These fries are made from parsnips rather than potatoes, so they’re sweeter and carry a touch of natural spice that potatoes just don’t have. Yet Snip Fries are just as fluffy on the inside and crispy on the outside as traditional oven fries. This is a healthier version of a favorite side dish that will make you excited to eat your veggies, especially with melty parmesan all on top. You won’t even need ketchup!
Ingredients
- 2 pounds parsnips, peeled and cut into 3 1/2-inch strips
- 2 tablespoons extra virgin olive oil
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/2 cup parmesan cheese, freshly grated
- 1/4 cup fresh parsley, chopped
Directions
Step 1 –Position an oven rack to the upper third position.
Step 2 –Preheat the oven to 425 degrees F.
Step 3 –Lightly coat a large baking sheet with cooking spray.
Step 4 –Place the parsnips in a large bowl.
Step 5 –Toss the parsnips with the olive oil, the salt, the pepper, and the garlic powder.
Step 6 –Spread the parsnips in a single layer on the prepared baking sheet.
Step 7 –Roast the parsnips for 15 minutes.
Step 8 –Flip the parsnip fries and roast until they are golden-brown and tender, about 10-15 minutes.
Step 9 –Sprinkle 1/2 of the parmesan over the parsnip fries and roast until the cheese melts, about 1 minute.
Step 10 –Let the parsnip fries rest for 2 minutes.
Step 11 –Toss the parsnip friess with the remaining parmesan cheese and the parsley.
Step 12 –Serve.
