Green Goddess Dip

What if the problem with salads is that they are too buttoned up and preoccupied with being the greens course? Maybe they should let their hair down. Green Goddess Dip certainly does, and the results are divine. A mix of sweet cabbage, savory chicken, and juicy cucumber in a tantalizingly herbaceous and bright green goddess dressing, ready to be scooped up on chips or with classic dipping vegetables like carrots. Green Goddess Dip seems like a heavenly way to enjoy the Earth’s bounty!

Ingredients

For the dressing:

  • 2 cloves garlic
  • 1 shallot, peeled
  • 2 tablespoons lime juice
  • 2 tablespoons lemon juice
  • 3 cups baby spinach, packed
  • 1/2 cup basil leaves
  • 1/2 cup parsley, leaves
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 avocado, skin and seed removed
  • 1/4 cup parmesan cheese, grated
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon ground black pepper

For the salad dip:

  • 4 cups cabbage, finely chopped
  • 1 1/2 cups cucumber, finely chopped
  • 4 scallions, thinly sliced
  • 3 cups rotisserie chicken, finely chopped
  • thick-cut pita chips or tortilla chips, to taste, for serving

Directions

Step 1 –Combine the garlic, the shallot, the lime juice, the lemon juice, the spinach, the basil, the parsley, the mayonnaise, the sour cream, the avocado, the parmesan cheese, the salt, and the pepper in a blender.

Step 2 –Blend the mixture until it is very smooth, about 1-2 minutes.

Step 3 –Combine the cabbage, the cucumber, the scallions, and the dressing in a large bowl and stir to combine.

Step 4 –Fold the chicken into the dip mixture

Step 5 –Serve with the chips.
