Labor Day Sandwiches

Let the only labor you do today be whipping up these Labor Day Sandwiches and psst, it takes less than 25 minutes! So you’ll be munching on a juicy, perfectly seasoned grilled chicken cutlet topped on a fluffy, ranch-coated kaiser roll in no time! You can’t forget the spicy Pepper Jack cheese, crispy lettuce, and sweet tomato piled on top. And it wouldn’t be a proper sandwich without a heaping side of your favorite salty, crispy potato chips! They say you’ll never work a day in your life if you love what you do, and you’ll experience that after cooking and chowing down on some Labor Day Sandwiches!

Ingredients

  • 1/4 cup plus 2 tablespoons buttermilk
  • hot sauce, to taste
  • 1/2 teaspoon salt, plus more to taste
  • pepper, to taste
  • 4 (5-6 ounce) chicken cutlets
  • 1 small clove of garlic, minced
  • 1/3 cup mayonnaise
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons fresh chives or scallions, chopped
  • 4 slices of Pepper Jack cheese
  • 4 kaiser or onion rolls, split and toasted
  • lettuce leaves, to taste
  • tomato slices, to taste
  • potato chips, optional, to taste and for serving

Directions

Step 1 –Preheat the grill or grill pan to medium-high.

Step 2 –In a large bowl, combine 1/4 cup of the buttermilk, the hot sauce, 1/2 teaspoon of the salt, and the pepper.

Step 3 –Add the chicken to the buttermilk mixture and turn to coat.

Step 4 –Soak the chicken in the buttermilk mixture for 10 minutes.

Step 5 –While the chicken soaks, in a small bowl, combine the garlic, mayonnaise, vinegar, remaining buttermilk, and chives.

Step 6 –Season the mayonnaise mixture with salt and pepper.

Step 7 –Place the chicken onto the grill or the grill pan, letting the excess marinade drip off.

Step 8 –Grill until the chicken is marked on the bottom, about 3-4 minutes.

Step 9 –Flip the chicken and top each piece of chicken with a slice of Pepper Jack.

Step 10 –Continue grilling the cheese-topped chicken until an instant thermometer inserted in the center reads 165 degrees F, about 2-4 minutes.

Step 11 –Spread each roll with the ranch sauce, then fill the rolls with the cooked chicken, lettuce, and tomato.

Step 12 –Plate and serve with the potato chips.
