Seared Tilapia

This Seared Tilapia is one of the best meals you’ll ever make, and it requires very minimal effort! What a deal! Get ready for a big plate of fluffy rice served alongside the most tender, yummy fillet of fish you’ve ever tasted! And it gets even better… top your fish with a sweet and spicy cucumber salad that will create a flavor concoction so phenomenal, you won’t know what to do other than to just keep making it again and again. Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon ginger, grated
  • 2 teaspoons honey
  • 2 tablespoons plus 1 teaspoon olive oil, divided
  • kosher salt, to taste
  • pepper, to taste
  • 2 scallions, thinly sliced
  • 1 jalapeƱo pepper, optional, finely chopped
  • 1/2 small pineapple, peeled, cored, cut into small pieces
  • 1 small English cucumber, cut into small pieces
  • 4 (6-ounce) tilapia fillets

Directions

Step 1 –Cook the rice according to the package directions.

Step 2 –In a large bowl, whisk the lime juice, the ginger, the honey, 2 tablespoons of the oil, the salt, and the pepper together.

Step 3 –Add the scallions, the jalapeƱo, the pineapple, and the cucumber to the lime mixture and toss to coat.

Step 4 –In a large nonstick skillet over medium heat, heat the remaining oil.

Step 5 –Season the fillets with the salt and the pepper.

Step 6 –Cook the fillets until they are golden-brown and reach an internal temperature of 145 degrees F, about 1-3 minutes per side.

Step 7 –Serve the fillets with the rice and top with the cucumber relish.
