Crispy Tilapia

Ingredients

  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill, snipped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 (6-ounce) tilapia fillets
  • 1 tablespoon lemon juice
  • lemon wedges, to taste

Directions

Step 1 –Position a rack in the center of the oven.

Step 2 –Preheat the oven to 400 degrees F.

Step 3 –Coat a 15x10x1-inch baking pan with cooking spray.

Step 4 –In a small bowl, combine the breadcrumbs, the olive oil, the dill, the salt, and the pepper.

Step 5 –Place the fillets into the prepared pan and coat them with the lemon juice.

Step 6 –Top the fillets with the breadcrumb mixture, patting them to help the crust adhere.

Step 7 –Bake the fillets, uncovered, until they just begin to flake easily with a fork, about 12-15 minutes.

Step 8 –Serve with the lemon wedges.
